(This recipe serves four only)
What you'll need:
-4 chicken breasts
-2 tablespoons chopped chives
-2 tablespoons chopped parsely or tarragon
-1 minced clove garlic
-1/2 teaspoon salt
-1/4 teaspoon white pepper
-dry bread crumbs
Bone, skin, cut in halves and pound, 420, to a 1/4-inch thickness.
Form butter into four rolls about two inches long and 1/2 inch in diameter.
Roll the butter-balls (LOL) lightly in a mixture of the rest of the ingredients.
Place one of the seasoned butter pieces in the center of each half breast
and roll so that the butter is completely enclosed. Secure with a wooden pick,
if necessary. Dust with flour. Brush with beaten egg and roll in dry bread crumbs.
Fry in deep fat heated to 360 degrees until golden brown. Drain on paper toweling
