Appetizers
Now we don't really know what was eaten at the wedding, but
here are some appetizers that would work!
Cucumber Lily & Stuffed Vegetables
Cucumber Lily
Have ready the following:
-thin slices unpeeled cucumber
-3-inch carrot sticks
Instructions:
Gently fold the cucumber slice around the base of the acrrot stick.
Fold a second slice around the stick from the other side. These form the lily
petals, with a carrot stamen in the center. Fasten with a pick, being careful to catch
all four lapped edges of the cucumber as well as piercing the carrot
stick. Wrap flowers lightly in a moistened paper towel and refrigerate until ready to use as
garnish.
Stuffed Vegetables
Have ready the following:
-any type of vegetables you want to use. (suggestions: snow pea pods, mushrooms, leeks, cherry tomatoes)
-crab meat
-chopped nuts
-lemon thyme
Instructions:
Cut the vegetables in half so that they can be filled. Fill with
crab meat, chopped nuts, or any other filling desired. Serve chilled
and garnish with a sprig of fresh lemon thyme.
Fried Shrimp Balls
What you'll need:
-1 and a quarter lb. shelled and minced shrimp
-6 finely chopped canned water chestnuts
-1 piece ginger, finely chopped
-1 small onion, chopped
-1 egg white
-1 teaspoon cornstarch
-3 teaspoons wine
-1 teaspoon sesame or other vegetable oil
Dash of pepper
Instructions:
Mix and shape the ingredients into balls. Fry in deep fat heated to about
365 degrees until golden brown.
